Irish Cheddar Onion Biscuits

Ingredients
2 cups Self Rising Flour
¼ tsp Baking Soda
7 tbsp Cold Butter, cut into pieces
¾ cup Buttermilk, plus additional for bushing
½ cup Shredded Irish Cheddar Cheese, plus more for topping
¼ cup sliced Green Onions
Preparation
Step 1
Preheat oven to 400°F. Line baking sheet with parchment paper.
Step 2
In large bowl, whisk together flour and baking soda.
Step 3
Cut butter into flour mixture with a fork or pastry blender until texture resembles coarse crumbs.
Step 4
Make a well in the center of the flour mixture, pour in buttermilk. Stir with fork just until mixture starts to come together to form semi-solid dough.
Step 5
Transfer dough to a floured work surface and press into a rectangle. Fold into thirds using a dough scraper. Press again into a rectangle. (Flour work surface again if dough seems sticky)
Step 6
Sprinkle half the cheese and half the green onions on the dough. Fold dough into thirds again. Dust with flour if necessary and roll out again to about 1/2" thick.
Step 7
Top with remaining cheese and green onions. Fold one last time into thirds to about 1/2" rectangle. Cut out biscuits with a 2 1/2" biscuit cutter.
Step 8
Transfer to prepared baking sheet. Brush lightly with buttermilk and sprinkle tops with cheddar cheese.
Step 9
Bake at 400°F for 15-18 minutes or until cooked through and golden brown.
Step 10
Transfer to wire rack to cool. Enjoy.
