Brussel Sprout Slaw with Pecans

About the Recipe

Ingredients

6 oz Thick sliced Bacon, diced (about 6 slices)


1 large leek, thinly sliced (about 2cups)


1 lb. fresh Brussel sprouts, trimmed and shredded (about 8 cups)


⅓ cup Olive Oil


¼ cup Apple Cider Vinegar


2 tbsp Honey


½ tsp Kosher Salt


¼ tsp Black Pepper


½ cup chopped toasted Pecans


2 tbsp Fresh Chives, thinly sliced

Preparation

Step 1

Cook Bacon in large heavy skillet over medium heat until crisp, about 15 minutes. Turning every couple minutes. Transfer to plate lined with a paper towel to let cool.


Step 2

Once bacon is cool, dice it up and set aside.


Step 3

Keep bacon dripping in pan. Add Brussels and leeks to pan . Cook for 3 to five minutes, stirring often.


Step 4

Place Brussels and leeks in a large bowl, set aside


Step 5

In a measuring cup or small bowl add olive oil, apple cider vinegar and honey, stir well. Add to Brussel mixture; blend well.


Step 6

Sprinkle with salt and pepper, add toasted pecan; blend well.


Step 7

Place in serving bowl and top with chives.
