Baked Garlic Parmesan Eggplant

Servings 4-6

Ingredients:
1 Large Eggplant
6 tbsp Unsalted Butter, melted
1 cup Breadcrumbs
¼ cup Parmesan Cheese
¼ tsp Smoked Paprika
½ tsp Garlic Powder
½ tsp Italian Seasoning
salt and pepper to taste
Step 1
Preheat oven to 400°F and Prepare a baking sheet lined with aluminum foil or parchment paper.
Step 2
Wash and Trim off the Green End of the Eggplant (you can peel the eggplant if you don't like the skin)
Step 3
In a Small bowl Melt Butter in Microwave for a few seconds; set aside. (or you can place butter in a small pan and melt, once melted, place in a small bowl and set aside)
Step 4
Slice the eggplant into 1/2" slices (disks), place all slices on a cooling rack set over a baking sheet, sprinkle with salt and pepper; let set for 25-30 minutes.
Step 5
In a Medium bowl, mix well the breadcrumbs, spices and parmesan cheese.
Step 6
Dip each eggplant slice into the butter first, then the breading mixture. Place on prepared pan.
Step 7
Bake for 15 minutes, then flip and bake for another 7 minutes. The eggplant should be golden brown and the breading crispy.
